Triple Chocolate Banana Bundt Cake

This banana bundt cake recipe uses oil, rather than butter for an extra moist crumb. We like our banana bundt cake with all of the chocolates -- chocolate chips in the batter, chocolate ganache glaze, and chocolate chips sprinkled on top!

Equipment

  • 10-cup bundt cake pan

Ingredients
 
 

For the cake:

  • 1 cup mashed overripe bananas about 2 large bananas or 3 small bananas
  • 3 large eggs at room temperature
  • 1 cup vegetable oil or canola oil
  • 2 tsp vanilla extract
  • 1 1/2 cups granulated white sugar
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

For the chocolate ganache glaze:

  • 4 oz semisweet chocolate
  • 1/2 cup heavy cream

To decorate

  • 1/2 cup mini chocolate chips we like to use a mix of white and dark

Instructions
 

  • Preheat oven to 350 F and spray a 10 cup bundt pan with non-stick cooking spray.
  • In a large bowl, mash the bananas. Add the 3 eggs, oil, and vanilla to the mashed bananas and stir to combine. Add the sugar to the banana mixture and stir to combine.
  • Sift the dry ingredients (flour, baking powder, baking soda, and salt) into the wet ingredients. Stir the flour mixture into the wet ingredients until just combined.
  • Fold the chocolate chips into the batter.
  • Pour the cake batter into the prepared bundt cake pan.
  • Bake 45 minutes until the edges start to pull away from the sides of the pan and the top feels firm when touched.
  • Allow cake to cool for 5 minutes in the pan, then immediately flip onto a wire rack. Bring to room temperature before decorating.
  • To make the ganache:
  • Pour the cream and chocolate chips into a microwave-safe bowl. Heat in 20 second increments, stirring in between bursts, until the chocolate is starting to melt into the cream. Stir to fully combine and melt the chocolate. Do not overheat or the chocolate will burn.
  • To decorate:
  • Once the ganache has cooled enough to hold a bit of shape, put the ganache in a piping bag with a small round tip and drizzle over the top of the cake. Top with mini chocolate chips.

Notes

Enjoy your slice of cake topped with whipped cream or with a scoop of ice cream. Cake stores well wrapped in plastic wrap for several days.
